Manda Pitha


For the batter:

  • rice- 2cups

For the filling:

  • grated coconut- 2cups
  • Oil for deep frying
  • Cardamom powder- 1tsp
  • Black pepper powder- 2tsp
  • Jaggery powder- 3cups
  • Grated coconut- 1cup
  • Cheese- 1cup
  • Ghee
  • Salt as per taste


  1. The rice is soaked in water for 4 hours. The soaked rice is made a paste and kept is a vessel. In a pan, half cup water, oil, cardamom powder and salt is added and the water is left for boiling. Once the water begins to boil, the batter is added and is mixed well. When all the water has been soaked, the mixture is poured on a plate and is brought to room temperature. The mixture is kneaded well with oil greased hands.
  2. To make the filling, a pan is heated and ghee is added. The grated coconut is sauteed. To the coconut is added black pepper powder, cardamom powder and jaggery powder. When this mixture is done, it is kept in a separate container.
  3. Now the previously made mixture is made into small circular balls. The balls are made flat with the help of hands. The filling is put in the centre and is again folded to made a ball. The mandas are kept in a separate plate. The rest of the mixture is also used to form mandas.
  4. An idli steamer is heated in boiling water. The idilis are put on the steamer and steamed for 10-15 minutes. The gas is turned off and is allowed to cool for 5 minutes. After it is cooled down, the manda pithas are served hot.

  1. ଭିଜା ହୋଇଥିବା ଚାଉଳକୁ ବାଟି ଦେଇ ଗୋଟେ ପାତ୍ରରେ ଅଲଗା ରଖି ଦିଅନ୍ତୁ। ଏବେ ଗୋଟେ କଡ଼େଇ ରେ ଅଧ କପ୍ ପାଣି, ତେଲ, ଗୁଜରାତି ଗୁଣ୍ଡ, ଲୁଣ ପକାଇ ଫୁଟେଇ ଦିଅନ୍ତୁ। ଫୁଟି ଆସିଲା ବେଳେ ସେଥିରେ ବଟା ହୋଇଥିବା ଚାଉଳ କୁ ପକାଇ ଭଲ ଭାବରେ ଫେଣ୍ଟନ୍ତୁ। ପାଣି ମାରିଆସିଲା ପରେ, ଏହି ମିଶ୍ରଣକୁ ଗୋଟେ ଥାଳିକୁ କାଢି ଦିଅନ୍ତୁ। ହାଲ୍କା ଥଣ୍ଡା ହୋଇଗଲା ପରେ, ହାତରେ ତେଲ ଲଗାଇ ଏହି ମିଶ୍ରଣକୁ ଭଲ ଭାବରେ ଚକଟି ଦିଅନ୍ତୁ।
  2. ଏବେ ପୁର ତିଆରି କରିବା ପାଇଁ, ଗୋଟେ କଡ଼େଇ ରେ ଘିଅ ଗରମ କରି କୋରା ନଡ଼ିଆ ପକେଇ ଭାଜନ୍ତୁ। ଏବେ ସେଥିରେ ଗୋଲମରିଚ ଗୁଣ୍ଡ, ଗୁଜରାତି ଗୁଣ୍ଡ ଓ ଗୁଡ ଗୁଣ୍ଡ ପକାଇ ହାଲ୍କା ଭାଜି ନିଅନ୍ତୁ। ଏହି ପୁର କୁ ଭାଜି ହେଲା ପରେ ଗୋଟେ ଅଲଗା ପାତ୍ରକୁ କାଢି ଦିଅନ୍ତୁ।
  3. ଏବେ ଆଗରୁ ବନା ହୋଇଥିବା ମିଶ୍ରଣ ଚକଟା ରୁ।ଛୋଟ କରି ଗୋଟେ ଗୁଳା ବନାନ୍ତୁ, ଏବେ ପାପୁଲି ସାହାଯ୍ୟରେ ସେ ଗୁଳା ମଝିକୁ ଚିପି ଚିପି ହାଲ୍କା ଚେପଟା ଆକାର ଦିଅନ୍ତୁ। ସେଥିରେ ନଡ଼ିଆ ପୁର ଦେଇ ,ଭଲ ଭାବରେ ବନ୍ଦ କରି ଦିଅନ୍ତୁ। ଏବେ ଏହି ପୁର ମଣ୍ଡାକୁ ଅଲଗା ଗୋଟେ ଥାଳି ରେ ରଖନ୍ତୁ। ଏମିତି ଭାବରେ ବାକି ମିଶ୍ରଣରୁ ମଣ୍ଡା ବନାନ୍ତୁ।
  4. ଏବେ ଗୋଟେ ଇଡଲି ଛାଞ୍ଚ ନେଇ ପାଣି ଗରମ କରନ୍ତୁ, ଇଡଲି ଛାଞ୍ଚ ରେ କଞ୍ଚା ମଣ୍ଡା ରଖି ୧୦-୧୫ ମିନିଟ ଭାପ ଦିଅନ୍ତୁ। ଏହା ପରେ ଗ୍ୟାସ ବନ୍ଦ କରି ୫ ମିନିଟ ଥଣ୍ଡା ହେବା ପାଇଁ ଛାଡି ଦିଅନ୍ତୁ। ଥଣ୍ଡା ହେବା ପରେ ଚାଞ୍ଚ ରୁ କାଢି ଗରମ ଗରମ ପାରସନ୍ତୁ।
