Mahula Pitha

Ingredients:

  • 1 cup mahula flower
  • 2 cups rice
  • 1/2 cup sugar
  • 1/2 cup grated coconut

Procedure:

  • The mahula flower is dried and used with rice to make the mahula pitha.
  • The Mahula flowers are washed, cleaned and then slit from the centre.
  • The flowers are soaked in water for 1-2 hours.
  • The rice is also soaked overnight.
  • The flowers and rice are made into a smooth paste and keep aside to ferment for 6-7 hours.
  • Salt is added as per taste.
  • Sugar and grated coconut are added and mixed thoroughly.
  • A pan is heated and is greased with some oil or ghee.
  • A ladle or two of the batter are poured in the centre of the pan.
  • It is covered and is allowed to sit on medium flame.
  • When one side is done, the pitha is flipped and allowed to sit till both the sides are golden brown in colour.
  • The pitha is then served hot.
