Chunchipatra Pitha


For the batter:

  • rice- 2cups

For the filling:

  • grated coconut- 2cups
  • jaggery powder- 2cups
  • cardamom powder- 1-3tbsp
  • salt as per taste
  • black pepper powder- 1-2tbsp


  1. The rice is soaked for around four hours. Using some amount of water, a batter is prepared. This batter is allowed to rest for 8 hours. Once the batter rises, salt is added as per taste and mixed.
  2. For making the filling, some amount of ghee is heated in a pan. The grated coconut is sauteed in it. The black pepper, cardamom powder and jaggery powder is added. This mixture is cooked and is kept aside.
  3. A tawa is heated. Some doob grass is dipped in the batter and a cross is drawn on the tawa. Once it gets crisp, the filling is added and the pitha is folded to make a folder. The pitha is turned around and is served hot.

  1. ପ୍ରଥମେ ଚାଉଳ କୁ ଚାରି ଘଣ୍ଟା ପାଣି ରେ ଭିଜାଇ ଦିଅନ୍ତୁ। ତାପରେ ଭିଜା ଚାଉଳକୁ ଅଳ୍ପ ପାଣି ଦେଇ ବାଟିଦିଆନ୍ତୁ l ଏହି ବଟାକୁ ୮ ଘଣ୍ଟା ପାଇଁ ଛାଡି ଦିଅନ୍ତୁ। ବଟା ସୋଧୁଅ ଏବେ ହାଲ୍କା ଫୁଲି ଯାଇଥିବ। ଏଥିରେ ଲୁଣ ପକାଇ ଫେଣ୍ଟି ଦିଅନ୍ତୁ। ସୋଧୁଅ କୁ ହାଲ୍କା ପାଣିଆ ରଖିଥିବେ।
  2. ଏବେ ପୁର ତିଆରି କରିବା ପାଇଁ, ଗୋଟେ କଡ଼େଇ ରେ ଘିଅ ଗରମ କରି କୋରା ନଡ଼ିଆ ପକେଇ ଭାଜନ୍ତୁ। ଏବେ ସେଥିରେ ଗୋଲମରିଚ ଗୁଣ୍ଡ, ଗୁଜରାତି ଗୁଣ୍ଡ ଓ ଗୁଡ ଗୁଣ୍ଡ ପକାଇ ହାଲ୍କା ଭାଜି ନିଅନ୍ତୁ। ଏହି ପୁର କୁ ଭାଜି ହେଲା ପରେ ଗୋଟେ ଅଲଗା ପାତ୍ରକୁ କାଢି ଦିଅନ୍ତୁ।
  3. ୩. ଏବେ ଗୋଟେ ତାୱା ଗରମ କରନ୍ତୁ, କିଛି ଦୁବ ପତ୍ର ନେଇ ସୋଧୁଅ ରେ ବୁଡାଇ ତାୱା ଉପରେ କ୍ରସ ଭଳିଆ ଆକାର କରନ୍ତୁ, ହାଲ୍କା ସେକି ହେଇ ଆସିଲା ବେଳକୁ, ନଡ଼ିଆ ପୁରକୁ ମଝିରେ ରଖନ୍ତୁ, ଏବେ ଚାରି ପଟୁ ପିଠା ପତିଆ ସାହାଯ୍ୟରେ ପୀଠକୁ ଫୋଲ୍ଡ କରନ୍ତୁ। ଏହାକୁ ଓଲଟେଇ ହାଲ୍କା ପୁଣି ସେକୀ ଦିଅନ୍ତୁ। ତାୱା ରୁ ଗରମ ଗରମ କାଢି ପରସନ୍ତୁ।
